Storing desi ghee and gur through a Pakistani summer
Why ghee melts and gur sweats in the heat and humidity, what is normal, what means spoilage, and simple ways to keep both at their best.
Multan's heat and monsoon humidity affect both ghee and gur. Most of what you see is normal, not spoilage.
Desi ghee
- Ghee turns liquid on hot days and sets again when it cools. That does not change its quality.
- The real enemy is water. Always use a dry spoon and keep the lid closed.
- Keep the jar away from sunlight and the stove. The fridge is fine in extreme heat.
- A sour, sharp or stale-oil smell means the ghee is going rancid.
Gur and shakkar
- Gur pulls moisture from the air and turns soft and sticky in the monsoon.
- Keep it in an airtight steel or glass jar, and in the monsoon months keep the sealed jar in the fridge.
- If shakkar clumps, break it up with a dry spoon.
- If you see mould or smell sourness, don't use it.
